How to make pigs in blankets this Christmas, what's the recipe and is there a vegetarian version?

Juicy pork sausages wrapped in flavoursome smoked bacon, they're arguably the best things about Christmas dinner.

How to make pigs in blankets

Pigs in blankets are reasonably straightforward to make.

You can wrap small cocktail sausages or even larger Cumberlands depending on your preference, and you'll need to cook them for longer depending on the size of the sausage.

If you go for a medium-sized chipolata sausage, here are some tips:

  • Pre-heat the oven to gas mark 6
  • Stretch out your bacon slices so that they are thinner – you can even lay clingfilm over them and run a rolling pin over the top
  • Wrap each sausage in bacon so that it is covered from end to end – securing with a cocktail stick if needed
  • Cook for 15 minutes until golden brown and cooked through

Is there a vegetarian version?

Vegetarians fall on hard times when it comes to the pigs in blankets and stuffing balls on the Christmas table.

But the good news is that you can do your own version without using any meat.

The PETA-approved version involves wrapping vegan sausages in vegan "bacon" (i.e. fakon) and pre-rolled dough before sprinkling with vegan cheese.

Once assembled, the veggie substitutes can be baked in the oven at gas mark 5 for 12 to 15 minutes.
